Everything But The Halloween Basket Brownies

Who still has baskets of Halloween candy sitting around over a week later? I know I do!

It seems for most of us, we didn’t get the amount of trick-or-treaters we thought we would or we just bought way too much candy.

Sure you can toss the candy or give it away, but why not bake with them?

Thats exactly what I did with these Everything But The Halloween Basket Brownies!

This year we bought a Costco size container of Halloween pretzel bags so I decided to make a pretzel crust and then bake brownies from scratch right on top of it with some leftover Halloween candy thrown right into the brownie batter!

These brownies are great because you can literally use almost any candy you have on hand.

This is the ultimate salty, but sweet treat!


Everything But The Halloween Basket Brownies

Still have way too much Halloween candy sitting around and not sure what to do with it? I have the perfect brownie recipe for you to use some of it up!

Ingredients
  

Pretzel Crust
  • 60 grams pretzels
  • 6 tbsp (84g) butter light
  • ¼ cup (54g) Swerve brown sugar
Brownie
  • ½ cup (112g) butter light
  • ¼ cup (34g) all purpose flour (gluten free if necessary)
  • ¼ cup (34g) chocolate protein powder whey/casein blend, I use PEScience Chocolate Cupcake
  • cup (35g) unsweetened cocoa powder
  • ¼ tsp kosher salt
  • ¼ tsp baking powder
  • ¾ cup (144g) Swerve granular sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 to 1½ cups (166g) Halloween Candy I used 2 Mini Twix (50g) , Two Mini Kit Kats (24g), 2 Reeses Peanut Cups (42g) and 1/2 c M&Ms (46g)

Instructions
 

Pretzel Crust
  • Preheat the oven to 350 and then place the pretzels in a small food processor, coffee grinder or single serve blender and pulse until you form crumbs.
  • Place the pretzel crumbs in a small bowl and add the butter and sugar and mix until combined.
  • Once the pretzel mixture is combined press the mixture into a parchment lined 9×9 baking dish. Push mixture down so it forms the crust of the brownies.
  • Bake for 10 minutes and then take out of the oven and let completely cool while preparing the brownie batter.
Brownies
  • In a small ball, melt the butter. I melted the butter in the microwave in 10-20 second increments. It took about 50 seconds total until it was completely melted. Set aside.
  • In a medium-sized bowl, combine the flour, protein powder, cocoa powder, salt and baking powder.
  • Once all the dry ingredients are combined, add to them the sugar, melted butter, vanilla extract and eggs. Mix until combined, but make sure not to over mix!
  • Unwrap all your candy and roughly chop them up (except the M&Ms).
  • Fold the chopped up candy and the M&Ms into the brownie batter.
  • Take the brownie batter and evenly spread it over your cooled pretzel crust. Then bake at 350 degrees for 18-22 minutes, or until a toothpick inserted near the center of the brownies comes out mostly clean.
  • Let cool before cutting into 16 brownies!

Notes

  1. The majority of calories from the Swerve brown sugar and granulated sugar were not included in the nutrition calculation.
  2. Calories were calculated using the exact ingredients listed above, including the exact types & amounts of candy. If using different candy, the nutrition facts might change.
  3. The protein powder used in this recipe was a whey/casein blend. Results may differ if using a different type of protein powder.
