These cookies n cream granola bars are easy to make and they are the perfect snack! Packed with both nutritious and fun ingredients, quick to throw together and no baking involved.

Chances are very likely that you have most of the ingredients in your pantry and those that you might not should be easily available to you in stores. So, what do you need?

Ingredients for Cookies N Cream Granola Bars:

  • Quick Oats: Oats are known to be a heart-healthy ingredient, plus they are very satiating. Oats contain soluble fiber, which is believed to reduce LDL-cholesterol (also known as the “bad cholesterol”).
  • Creamy Peanut Butter: I love using different flavors of American Dream Nut Butters in many of my recipes, but here I like to use plain creamy peanut butter because there are a lot of other things going on here. Try to use one thats more drippy. I use the Whole Foods Brand Creamy Unsweetened No Salt Added Peanut Butter.
  • Honey: Honey will bring sweetness to the recipe and help keep the bars together, along with the flax. You can also opt to replace the honey with maple syrup, date syrup or even Kodiak Cake’s Peanut Butter or Almond Butter syrups would work great too!
  • Cookies & Cream Magic Spoon Cereal: I recently discovered this cereal, but I love it! It’s higher in protein and truly tastes like some of my favorite childhood cereals. Other cereal options you can use are Three Wishes Cocoa Flavor and Oreo Os (of course nutrition information will vary depending what you use).
  • Flaxseed Meal: This adds some extra protein and helps hold the bars together!
  • Oreo Thins: Because who doesn’t love Oreos?
  • Vanilla Extract: Just to add a little more flavor.

Instructions:

  1. In a microwave safe bowl, combine the peanut butter and the honey. Then microwave for 30 seconds or until smooth and combined.
  2. Add in the vanilla extract and stir to combine.
  3. Crush the Oreos up, leaving some larger pieces than others (see photo below).
  4. Add all the remaining ingredients to the peanut butter mixture and stir until all the ingredients are combined. It should be a very thick and sticky texture and everything should stay combined easily.
  5. Line a baking dish (8×8 or 9×9 will work best) with parchment paper. Press the oat mixture firmly into the baking dish and refrigerate for at least one hour before cutting into bars.

These will be best kept stored in the refrigerator in a single layer so they don’t stick. If you don’t plan to eat within two weeks or so, you can freeze them individually wrapped.
