For as long as I can remember I have had an obsession with anything peanut butter! So combining peanut butter with my almost equal obsession with coffee was a no brainer when it was time to make my next ice cream flavor using the Ninja Creami!

It may be getting colder outside, but it’s never too cold for ice cream! I took a break from seasonal flavors to go with a classic favorite of mine – – Peanut Butter Coffee Oreo! This flavor takes me right back to summers in Cape Cod, where getting ice cream is an almost daily occurrence. While this recipe is almost guaranteed to be lighter in calories, it definitely doesn’t sacrifice in taste!

This recipe uses fat free half and half, peanut butter and instant coffee for the base & for my mix-ins I used Salted Caramel Brownie Oreos and White Chocolate Reeses Thins! Check out the full recipe below!

Ingredients

  • 14 fl oz Fat Free Half & Half
  • 50 g Monkfruit Sweetener
  • 1 tsp Vanilla Extract
  • 3 tbsp Peanut Butter
  • 4 tsp Instant Coffee
  • 2 White Chocolate Reeses Thins (or mix-in of your choosing)
  • 2 Salted Caramel Brownie Oreos (or mix-in of your choosing)

Directions

  1. In a medium-sized bowl, combine the half and half, monkfruit sweetener, vanilla extract, peanut butter and instant coffee until well combined and sugar is dissolved.
  2. Pour base into an empty Creami Pint, place storage lid on pint and freeze for 24 hours.
  3. After 24 hours, remove the pint from the freezer and remove the lid. Place pint in outer bowl, install the creami paddle onto the outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.
  4. Select the LITE ICE CREAM option.
  5. Once the processing is complete, remove the bowl assembly from the motor base and create approximately a 1 1/2 inch hole down the middle all the way to the bottom of the pint.
  6. Break the Oreos and Reeses things into 2-4 pieces each and place in the hole you created down the middle of the pint.
  7. Re-assemble the bowl onto the motor base and lock back into place.
  8. Select the MIX-IN option to process.
  9. When processing is complete, remove ice cream from pint and serve immediately.
