One of the only things my almost two-year old son will eat is Spinach & Kale Bites! So… I got inspired to turn his favorite dish into a pizza, which brings me to my latest creation…

Spinach & Kale Crust Pizza!

This isn’t a replacement for the regular pizza we all know and love, but if you’re looking for something lower carb and need to increase your veggies then this recipe is for you!

Ingredients:

  • 1 small yellow onion, chopped
  • 2 tbsp olive oil
  • 5 oz fresh baby spinach
  • 2 cups fresh kale, packed
  • 1 scallion
  • 1 egg
  • 2/3 cup whole wheat breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/2 cup pizza sauce
  • 1 cup part skim shredded mozzarella cheese

Directions:

  1. In a frying pan heat 2 tbsp of olive oil. Once hot, add the onion and sauté until soft, about 5 minutes.
  2. Add the spinach and kale to the frying pan and cook until they wilt.
  3. Place the spinach and kale mixture, along with the chopped scallion, into a food processor and pulse for 2-3 seconds. Transfer the mixture to a medium sized bowl.
  4. Add in the egg, breadcrumbs and parmesan cheese. Mix until combined.
  5. Take a large baking sheet and cover it with parchment paper. Spray the parchment paper with some cooking spray.
  6. Take the spinach and kale mixture and spread it out evenly on the baking sheet to make the pizza crust (I did it in a rectangular shape, but you can make whatever shape you’d like).

7. Place the pizza crust in an oven preheated to 420 degrees and bake for 20 minutes.

8. Take the pizza crust out of the oven and spread the pizza sauce on the crust. Then sprinkle the mozzarella cheese over the pizza sauce. Cook for an additional 5 minutes. If you want the pizza slightly crispy, you can broil it for an additional 2 minutes.
